Our History


The learning process
The Acaiaba family’s journey with dough began when they volunteered at a friend’s bakery, learning the art of breadmaking from scratch. With every early morning and flour-covered apron, they discovered a love for creating food that brings people together. That beginning sparked a dream that grew into something greater: a commitment to flavor, quality, and community. Today, that same dedication is baked into everything we do — from Brazil to the U.S., one delicious bite at a time.


The beginning
In 2008, the Acaiaba family began baking bread at home, turning their kitchen into a small dream lab. With hard work and passion, they invested in equipment and launched their business in a simple, yet purposeful way.


Growing
In 2016, the Acaiaba family began working with other types of dough, including pizza. It was a great learning experience, where everyone got involved, embraced, and approved every new challenge.

Now, in 2025, after years of dedication, learning, and growth, the Acaiaba family decided to take the next big step: opening Geez! – Dough Express. With the mission of bringing the unmistakable flavor of long-fermentation dough to both Americans and immigrants, Geez! offers high-quality products made with passion and tradition. Every pizza, bread, and dish we prepare is a tribute to our journey, our love for cooking, and the unity that food can bring.
